Which came first? We’re not sure and quite honestly don’t even care. What we do know is they taste amazing together rolled up in a warm tortilla with some melty cheese, guacamole salsa, and plain greek yogurt. Call us Chik-fil-A because we’re eating chicken for breakfast.

Nonfat plain Greek yogurt (it tastes just like sour cream and has great macros!)
INSTRUCTIONS

Every few days we grill up a bunch of chicken to eat and use in various recipes throughout the week. If you don’t have any chicken already grilled or cooked up, you’ll have to do this first. Chop it up into small pieces.

If you just cooked your chicken you can skip this step, but if your chicken came from the fridge like ours did, throw the chopped pieces into a hot skillet and heat up for a minute or two.

Crack eggs into pan and scramble up with the chicken.

If you have a gas stove (first of all, jealous) turn the heat down low and move the skillet. You’re going to place the large four tortilla directly over the flame and heat/cook each side for 20-30 seconds. If your stove is electric, do this step in the hot skillet. It will take a little bit longer but will do the trick.

Now you’re ready to add your chicken and egg scramble to the tortilla and top with anything additional you’d like! We added cheese, guacamole salsa, plain greek yogurt, and some salt and pepper.
MAKE AHEAD IDEA
Burritos are great to make ahead and freeze for busy mornings or meal prep! A few tips:

Don’t add wet ingredients like greek yogurt, sour cream, salsas, avocado, etc. This will make your burrito soggy when reheating.

Let ingredients cool before rolling tortilla and wrapping up to place in freezer.

Wrap burrito in a paper towel and then wrap in foil. Then place in plastic bag and remove as much air as possible before zipping up.

You can freeze burritos for about 3 months! But we can almost guarantee these won’t last longer than a week before they all get eaten.

Reheat in the microwave by removing the foil and heating 1:30-2:00 minutes while wrapped in the paper towel.
